Ixchel is a scientist specializing in food toxicology, with a professional background spanning nearly a decade across the food industry and academic research. She began her career in Scientific and Regulatory Affairs at Mondelēz International in Mexico, and later moved to the Netherlands to pursue an MSc in Food Safety and a PhD in Toxicology at Wageningen University & Research. She then joined DSM—now dsm‑firmenich—working as a regulatory toxicologist evaluating the safety of food enzymes and supporting regulatory submissions. She is also a certified European Registered Toxicologist. Ixchel now contributes her expertise to Arla Foods in Denmark, where she works as a Scientist in Toxicology helping to drive safe and sustainable dairy innovation.
